As a bubbling pot of cultures, the South America and the Caribbean have brought to the table some of the most unique cuisines. Here we can find interesting iterations of many world’s famous cuisines, like Peruvian chaufa takes its root from Chinese fried rice, or ceviche is a strong contestant to Japanese sashimi or Italian carpaccio, all by ingenious combination of classic recipes and native ingredients and spices. Throughout the cuisines of Latin America, we find variety, alluring fragrance, flavourful bites with occasional spiciness from chillies and always a pleasant culinary experience.
Born in Mexico, whose cuisine is no doubt one of the most influential of the world, our Guest Chef Jaime “Jimmy” Rojas has had under his belt 14 years of experience in 17 countries. In addition to holding the position of Executive Chef 3 times, Chef Jimmy had the honour, and skill, to have worked in the two to three-starred Michelin restaurants, most noticeably being the Chef de Cuisine in the two-Michelin ANNUA, Spain.
Coming to the Savouring Latin America Week at InterContinental Saigon, Chef Jimmy will utilise both his expertise and his profound respect for his home continent’s cuisines to bring you eight spectacular dinner buffets. Along with our exquisite seafood selections and signature buffet counters, you are in for a treat of over 70 dishes from 12 Latin American countries. From the big names like Mexican tacos, Chilean empanadas, Argentinian steak chimichurri, or Brazilian feijoada stew. To the tasty representatives from the countries of the Caribbean like Colombian mondongo, the jerk chicken from little Saint Lucia, Dominican Republic’s rum flambéed banana ice cream and guayaba (guava) pie puff of Cuba.
Music is the final highlight to complete the wholesome cultural and culinary experience of Savouring Latin America Week. The fiery salsa and flamenco tunes will be performed live to you by the band and artists from Carmen Bar, a famous nightlife hub of the city for its Latin music that has been played nightly since the early 2000s.
